DESCRIPTION: A firm, slightly springy white cheese from Cyprus, traditionally made with sheeps’ milk, although these days mass-produced varieties often use cows’ milk. In texture, Halloumi is similar to a firm mozzarella, making it a popular ingredient in Middle Eastern cooking. Unlike mozzarella, however, it has a strong salty flavour, particularly when preserved in brine.

in the ancient days it was the job of women to make Halloumi. And they only used utensils and equipment only from the village they are in and never imported anything from outside Cyprus. However, many times since there was sufficient goats and sheep for each household to produce cheese, females from each family used to make pool of milk to produce cheese and distribute it among the cheese community members they formed at that time. The Halloumi making was seasonally, and was only for household family use. Then day after day, it changed to be as income generator. Most of villager and shepherds engage everyday from 6 A.M till midday in the process of cheese production for resale.

How should I use this cheese?

Halloumi cheese is the main dish in the Cypriot breakfast meal; along side some fresh fruits and or vegetables. You want some change? Have it made on the grill. For a non-melting cheese the grilled Halloumi satisfies more difficult tastes of people. Very delicious!

We can post orders all over Australia.

We post all internet orders every Monday, Tuesday and Wednesday. We DO NOT send on Thursdays and Fridays as we do not want to risk the cheese sitting at a post office over the weekend getting hot.

It takes 2 days to travel to most capital cities; however it can take up to 3 days for more remote areas.

The cheese is transported in a Styrofoam esky with chemical ice that does not leak liquid. The cheese is then packed in bubble wrap and shredded paper to help protect the products.

Your order come with its own tracking number so if it does not arrive on time or is lost please contact us and we will contact Australia post to resolve the issue.

Please make sure you are home on the day of delivery. If you are not home then Australia Post will try to call you on the details you have provided with this order. Sometimes they will not call you and simply leave a note in your letter box telling you to pick it up from your local post office. If this occurs please retrieve it ASAP so that you receive your cheese in its best condition.

If you are not ordering any cheese and only products that do not need to be sent chilled, please email us your order as we can send it to you as regular post at a cheaper rate.

Some cheeses are more fragile than others. The softer the cheese the more fragile it is in postage. We pack all orders to the best of our abilities however we are sometimes limited by space and weight and trying to keep it all cool sometimes makes things very tricky.
