This cheese is one of our newest additions and we are proud to say we have created a way to reduce waste in a 360 degree way. Our spirits are made from the waste of our cheese (whey) and then waste from our Gin process is then given back to the cheesery to reuse.
After Ryan distills his Gin, the spent Native Australian botanical’s are saved and then rolled onto the outside of our cheese. You will experience rare Australian natives with floral and sweet characters as well as Lemon Myrtle, Anise Myrtle, Wattle seed, and Tasmanian pepper leaf.
When young The Herbalist is firm and moist with citrus flavours and a slightly sour tang. With age the rind becomes dotted with grey-blue mould. The texture becomes softer,absorbing the savoury and herbaceous flavours of the rind striking a delicate balance with the warm ,bright sheepy quality of the interior paste.
the It is renneted with Spanish Cardoon Thistle which imparts an unusual moorish bitterness to the cheese. The cheese is rolled in a selection of herbs at its birth. Over the maturation time, these herbs impart their flavours on the curd. The cheese is modelled on a famous sheep milk cheese from the island of Corsica – the Fleur De Marquis.
How should I use this cheese?
Excellent served on a cheese platter as it is visually very interesting. Drizzle with unfiltered extra virgin olive oil, and serve with crusty Italian bread . It’s herbaceous flavours pair well with a range of lighter red wine styles.

We post all internet orders every Monday, Tuesday and Wednesday mornings. We DO NOT send on Thursdays and Fridays as we do not want to risk the cheese sitting at a post office over the weekend getting hot.
It takes 2 days to travel to most capital cities; however it can take up to 3 days for more remote areas.
The cheese is transported in a Styrofoam esky with chemical ice that does not leak liquid. The cheese is then packed in bubble wrap and shredded paper to help protect the products.
Your order come with its own tracking number so if it does not arrive on time or is lost please contact us and we will contact Australia post to resolve the issue.
Please make sure you are home on the day of delivery. If you are not home then Australia Post will try to call you on the details you have provided with this order. Sometimes they will not call you and simply leave a note in your letter box telling you to pick it up from your local post office. If this occurs please retrieve it ASAP so that you receive your cheese in its best condition.
If you are not ordering any cheese and only products that do not need to be sent chilled, please email us your order as we can send it to you as regular post at a cheaper rate.
Some cheeses are more fragile than others. The softer the cheese the more fragile it is in postage. We pack all orders to the best of our abilities however we are sometimes limited by space and weight and trying to keep it all cool sometimes makes things very tricky.
