Our signature cheese. Made using the famous Penicillium Roqueforti . Released between 3 & 4 months of age it is a distinct & sometimes unusually flavoured blue with an underlying ewe’s milk derived sweetness. At times this cheese shows hints of smoked meat on the finish – a characteristic of small amounts of brevi.
One of the great appellation controlled cheeses, and widely heralded as the King of French cheeses. Ripened in caves, Roquefort’s (roke-FORE) marbled blue veins are induced by “fleurines”, currents of air let into the cave to assist the mould development process. This mould carries is own fame and is now recognized as “Penicillium roqueforti”. All rindless wheels are foil-wrapped and stand 100mm high and 200mm in diameter. Roquefort has one of the most complex and robust blue flavours that sets it apart from all other blues. Soft yet crumbly, with a spicy, sea-salty flavour. The greenish- blue veining characteristics make Roquefort easily recognizable.
How should I use this cheese?
Roquefort deserves to be shown off as a dessert cheese paired with a sweet dessert wine or served crumbled with a side salad.
We can post orders all over Australia.
We post all internet orders every Monday, Tuesday and Wednesday mornings. Any orders received after Tuesday will be sent the following week. We DO NOT send on Thursdays and Fridays as we do not want to risk the cheese sitting at a post office over the weekend getting hot.
It takes 2 days to travel to most capital cities; however it can take up to 3 days for more remote areas.
The cheese is transported in a Styrofoam esky with chemical ice that does not leak liquid. The cheese is then packed in bubble wrap and shredded paper to help protect the products.
Your order come with its own tracking number so if it does not arrive on time or is lost please contact us and we will contact Australia post to resolve the issue.
Please make sure you are home on the day of delivery. If you are not home then Australia Post will try to call you on the details you have provided with this order. Sometimes they will not call you and simply leave a note in your letter box telling you to pick it up from your local post office. If this occurs please retrieve it ASAP so that you receive your cheese in its best condition.
If you are not ordering any cheese and only products that do not need to be sent chilled, please email us your order as we can send it to you as regular post at a cheaper rate.
Some cheeses are more fragile than others. The softer the cheese the more fragile it is in postage. We pack all orders to the best of our abilities however we are sometimes limited by space and weight and trying to keep it all cool sometimes makes things very tricky.
