Fresh sheeps milk cheese mostly available in it’s youngest, freshest form. Tart and creamy at the young stages, maturing to an even more tart and fruity product as it ripens. Very thin and smooth natural rind cheese with a pastey, milky texture.
How should I use this cheese?
Excellent served on a cheese platter as it is visually very interesting. It is also wonderful served sliced and drizzled with unfiltered extra virgin olive oil, ripe tomatoes, fresh basil and ground black pepper and a dash of nutmeg. Spoil yourself by stacking a crusty Italian bread with the fresh cheese, sliced prosciutto, roasted peppers, anchovies and extra virgin olive oil.
